Clase Azul Mezcal San Luis Potosi is the brand's third mezcal release, produced in Estacion Ipina, a small village of roughly 250 people in the Mexican state of San Luis Potosi. Made from 100 percent Agave Salmiana grown at approximately 6,500 feet elevation on the region's semi-desert slopes, the agave is slow-cooked in traditional domed masonry ovens, crushed using a Chilean mill, and fermented using agua miel, rainwater collected atop the agave pinas, before undergoing a rare simultaneous double distillation in separate copper stills.
Bottled at 43% ABV, this crystal-clear, additive-free mezcal pours with silver highlights and brings a complex aroma of cooked agave, caramel, green chile, sweet fruit, and freshly cut grass, layered with subtle wildflower notes. The palate opens herbal, developing into caramel, lime zest, and clove, finishing long and smooth with a persistent mineral backbone and lingering spice.
